Ingredients
- 4 to 6 lamb chops
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh thyme, leaves only
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine minced garlic, olive oil, rosemary, thyme, salt, and pepper. Mix until well blended.
- Rub the marinade generously over both sides of the lamb chops.
- Place the lamb chops on the prepared baking tray.
- Roast in the oven for about 20 minutes, turning halfway through. Cook until the internal temperature reaches 145°F for medium-rare, or adjust to your preferred doneness.
- Remove from the oven and let rest for 5 minutes before serving with lemon wedges.
