Ingredients
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground ginger
- ½ tsp cinnamon
- ¼ tsp nutmeg
- Pinch of salt
- ½ cup unsalted butter (melted)
- ¾ cup raw honey
- 2 large eggs
- 1 cup fresh orange juice
- Zest of 2 oranges
- 1 tbsp grated fresh ginger
- 2 tbsp honey (for glaze)
- 2 tbsp orange juice (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and grease your baking pan.
- Whisk together the flour, baking soda, ground ginger, cinnamon, nutmeg, and salt in a medium bowl until well combined.
- Mix the melted butter, raw honey, and eggs in a separate bowl until smooth and creamy.
- Stir in the fresh orange juice, zest, and grated ginger until fully incorporated.
- Fold the dry ingredients into the wet mixture until just combined, avoiding overmixing.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
- Mix 2 tablespoons of honey with 2 tablespoons of orange juice for an optional glaze, then brush this mixture over the warm cake.
- Allow the cake to cool for 10 minutes before transferring it to a wire rack.
Notes
For extra flavor, use high-quality honey and fresh grated ginger. Serve with whipped cream or yogurt for added richness.
