Description

A delightful cake combining zesty oranges and aromatic ginger, sweetened with honey for a moist and flavorful experience.


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • Pinch of salt
  • ½ cup unsalted butter (melted)
  • ¾ cup raw honey
  • 2 large eggs
  • 1 cup fresh orange juice
  • Zest of 2 oranges
  • 1 tbsp grated fresh ginger
  • 2 tbsp honey (for glaze)
  • 2 tbsp orange juice (for glaze)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking pan.
  2. Whisk together the flour, baking soda, ground ginger, cinnamon, nutmeg, and salt in a medium bowl until well combined.
  3. Mix the melted butter, raw honey, and eggs in a separate bowl until smooth and creamy.
  4. Stir in the fresh orange juice, zest, and grated ginger until fully incorporated.
  5. Fold the dry ingredients into the wet mixture until just combined, avoiding overmixing.
  6. Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  8. Mix 2 tablespoons of honey with 2 tablespoons of orange juice for an optional glaze, then brush this mixture over the warm cake.
  9. Allow the cake to cool for 10 minutes before transferring it to a wire rack.

Notes

For extra flavor, use high-quality honey and fresh grated ginger. Serve with whipped cream or yogurt for added richness.
