Ingredients

  • 1 lb large shrimp, peeled and deveined (450 g)
  • 2 tablespoons olive oil (30 ml)
  • 4 cloves garlic, minced
  • 1 teaspoon onion powder (5 g)
  • 1 teaspoon paprika (5 g)
  • 1/2 teaspoon salt (3 g)
  • 1/4 teaspoon black pepper (1 g)
  • 1 cup coconut milk (240 ml)
  • 1 tablespoon cornstarch (8 g)
  • 2 tablespoons water (30 ml)
  • 1 tablespoon lemon juice (15 ml)
  • 1/4 cup chopped fresh parsley (15 g)


Instructions

  1. Heat 1 tablespoon of olive oil in a large pan over medium heat.
  2. Add the shrimp to the pan in a single layer.
  3. Cook the shrimp for 2-3 minutes on each side until pink and cooked through.
  4. Remove the shrimp from the pan and set aside.
  5. Add the remaining 1 tablespoon of olive oil to the pan.
  6. Add the minced garlic and sauté for about 1 minute until fragrant.
  7. Stir in the onion powder, paprika, salt, and black pepper.
  8. Pour in the unsweetened coconut milk, stirring to combine.
  9. In a small bowl, mix the cornstarch with 2 tablespoons of water until smooth.
  10. Add the cornstarch mixture to the pan and stir continuously.
  11. Cook for 2-3 minutes until the sauce thickens.
  12. Stir in the lemon juice and return the shrimp to the pan.
  13. Simmer for 1-2 minutes to heat the shrimp through.
  14. Remove from heat and sprinkle with chopped fresh parsley.
  15. Serve immediately.
