Ingredients
- 1 lb large shrimp, peeled and deveined (450 g)
- 2 tablespoons olive oil (30 ml)
- 4 cloves garlic, minced
- 1 teaspoon onion powder (5 g)
- 1 teaspoon paprika (5 g)
- 1/2 teaspoon salt (3 g)
- 1/4 teaspoon black pepper (1 g)
- 1 cup coconut milk (240 ml)
- 1 tablespoon cornstarch (8 g)
- 2 tablespoons water (30 ml)
- 1 tablespoon lemon juice (15 ml)
- 1/4 cup chopped fresh parsley (15 g)
Instructions
- Heat 1 tablespoon of olive oil in a large pan over medium heat.
- Add the shrimp to the pan in a single layer.
- Cook the shrimp for 2-3 minutes on each side until pink and cooked through.
- Remove the shrimp from the pan and set aside.
- Add the remaining 1 tablespoon of olive oil to the pan.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Stir in the onion powder, paprika, salt, and black pepper.
- Pour in the unsweetened coconut milk, stirring to combine.
- In a small bowl, mix the cornstarch with 2 tablespoons of water until smooth.
- Add the cornstarch mixture to the pan and stir continuously.
- Cook for 2-3 minutes until the sauce thickens.
- Stir in the lemon juice and return the shrimp to the pan.
- Simmer for 1-2 minutes to heat the shrimp through.
- Remove from heat and sprinkle with chopped fresh parsley.
- Serve immediately.
