  • 4 skinless boneless chicken thighs
  • 200g fresh pineapple chunks
  • 1 small shallot
  • Juice of 1 lime, plus extra wedges for serving
  • Small handful fresh coriander, roughly chopped
  • 1 ripe avocado, cubed
  • 8 small corn or flour tortillas
  • 2 tbsp chipotle paste
  • 2 tbsp runny honey
  • 1 ½ tsp tomato puree
  • 1 tsp salt
  • 2 large garlic cloves, crushed


Instructions

  1. Whisk together the marinade ingredients (chipotle paste, honey, salt, and crushed garlic) in a medium bowl to combine flavors.
  2. Cut the chicken into bite-sized pieces and toss it with the marinade. Let it rest while you preheat the oven.
  3. Spread the marinated chicken on a baking tray and add the pineapple chunks, layering them evenly.
  4. Roast for 30 minutes until the chicken is cooked through and golden brown, creating a beautiful caramelization.
  5. While roasting, finely chop the shallot and prepare the avocado, ensuring fresh and vibrant toppings.
  6. If using corn tortillas, char them lightly in a hot pan for a delicious texture and flavor.
