- 200g fresh pineapple chunks

- Juice of 1 lime, plus extra wedges for serving

- 1 ripe avocado, cubed
- 8 small corn or flour tortillas
- 2 tbsp chipotle paste
- 2 tbsp runny honey
- 1 ½ tsp tomato puree
- 1 tsp salt
- 2 large garlic cloves, crushed
Instructions
- Whisk together the marinade ingredients (chipotle paste, honey, salt, and crushed garlic) in a medium bowl to combine flavors.
- Cut the chicken into bite-sized pieces and toss it with the marinade. Let it rest while you preheat the oven.
- Spread the marinated chicken on a baking tray and add the pineapple chunks, layering them evenly.
- Roast for 30 minutes until the chicken is cooked through and golden brown, creating a beautiful caramelization.
- While roasting, finely chop the shallot and prepare the avocado, ensuring fresh and vibrant toppings.
- If using corn tortillas, char them lightly in a hot pan for a delicious texture and flavor.
