Description

A delightful one-pan meal featuring tender chicken breasts, vibrant cherry tomatoes, and fresh spinach, all coated in a tangy balsamic vinaigrette.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup balsamic vinegar
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup cherry tomatoes
  • 1 cup spinach


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt, pepper, and oregano.
  3. Add chicken to the skillet and cook for about 7-8 minutes on each side until browned.
  4. Add garlic and cherry tomatoes to the skillet and cook for 2-3 minutes until tomatoes begin to burst.
  5. Pour balsamic vinegar over chicken and tomatoes, letting it simmer for another 5 minutes until chicken is fully cooked.
  6. Stir in spinach and cook until wilted. Serve warm.

Notes

Adjust amounts of balsamic vinegar to taste, and consider adding crushed red pepper for a hint of spice.
