Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup balsamic vinegar
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup cherry tomatoes
- 1 cup spinach
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt, pepper, and oregano.
- Add chicken to the skillet and cook for about 7-8 minutes on each side until browned.
- Add garlic and cherry tomatoes to the skillet and cook for 2-3 minutes until tomatoes begin to burst.
- Pour balsamic vinegar over chicken and tomatoes, letting it simmer for another 5 minutes until chicken is fully cooked.
- Stir in spinach and cook until wilted. Serve warm.
