- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- Optional: 1/4 cup powdered sugar
- Optional: 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
- Combine the all-purpose flour, granulated sugar, baking powder, and salt in a large bowl.
- Add the softened butter, eggs, milk, lemon juice, and lemon zest to the dry ingredients.
- Mix until just combined and smooth, taking care not to overmix.
- Pour the batter into the prepared cake pan.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- For the optional glaze, whisk together powdered sugar and lemon juice until smooth and drizzle over the cooled cake.
