Ingredients

  • 2 cups (240g) fresh mushrooms, sliced
  • 1 tablespoon (14g) olive oil
  • 1 clove garlic, minced
  • 1/2 cup (120ml) heavy cream
  • 1/4 cup (25g) grated vegetarian-friendly cheese
  • 1 tablespoon (15ml) lemon juice
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon (14g) fresh parsley, chopped


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add sliced mushrooms to the skillet.
  3. Cook mushrooms, stirring occasionally, until they are golden brown.
  4. Add minced garlic to the skillet with the mushrooms.
  5. Sauté the garlic with the mushrooms for about 1 minute.
  6. Pour heavy cream into the skillet with the mushrooms and garlic.
  7. Stir in grated Parmesan cheese until it melts into the cream.
  8. Add lemon juice to the skillet and stir well.
  9. Season with salt and black pepper to taste.
  10. Continue to cook until the sauce thickens slightly.
  11. Remove the skillet from heat.
  12. Sprinkle chopped parsley over the mushroom mixture.
  13. Serve warm.
