Ingredients
- 2 tablespoon unsalted butter 28g
- 1 onion, finely diced
- 4 garlic cloves, crushed
- 4 cups grated zucchini (or squash), or zucchini cores. I also added 1/2 cup sliced zucchini for visual appeal, totally optional 1 lb, 600 g
- 1 teaspoon (5 ml) Italian seasoning (or 1/2 teaspoon (3 ml) dried basil and 1/2 teaspoon (3 ml) dried oregano)
- 1 teaspoon (5 ml) salt
- 1/4 teaspoon (1 ml) black pepper
- 1 cup shredded moz zarella cheese 8 oz, 225g
- 1/2 cup sour cream 120g
- 1 tablespoon (15 ml) olive oil
- 1 tablespoon (15 ml) unsalted butter
- 1 cup panko breadcrumbs 65g
- 1/4 cup fresh grated hard cheese 25g
Instructions
- Set your oven to 350°F (180°C) and position the rack in the middle.
- In a large frying pan, melt the 2 tablespoons of butter over medium heat. Once it has melted, add the finely chopped onion, crushed garlic, grated zucchini, Italian seasoning, salt, and pepper.
- Cook this mixture for 6-8 minutes until it becomes tender and aromatic. If there is excess liquid, remove it.
- After turning off the heat, incorporate the mozzarella cheese and sour cream, stirring until everything is well mixed. Transfer this blend into an 11×7 inch glass or baking dish, smoothing it out with a spatula.
- In a microwave, melt the 1 tablespoon of butter and combine it with olive oil. Pour this over the panko breadcrumbs, ensuring they are evenly coated.
- Distribute the buttered breadcrumbs over the zucchini mix in the dish. Add a sprinkle of grated hard cheese on top.
- Place in the oven for 20-25 minutes, or until the top is bubbly and a golden hue. For extra browning, switch to broil for an additional 1-2 minutes.
- Allow the casserole to sit for 5-10 minutes before serving it hot. Enjoy your meal!
