Ingredients

  • 2 tablespoon unsalted butter 28g
  • 1 onion, finely diced
  • 4 garlic cloves, crushed
  • 4 cups grated zucchini (or squash), or zucchini cores. I also added 1/2 cup sliced zucchini for visual appeal, totally optional 1 lb, 600 g
  • 1 teaspoon (5 ml) Italian seasoning (or 1/2 teaspoon (3 ml) dried basil and 1/2 teaspoon (3 ml) dried oregano)
  • 1 teaspoon (5 ml) salt
  • 1/4 teaspoon (1 ml) black pepper
  • 1 cup shredded moz zarella cheese 8 oz, 225g
  • 1/2 cup sour cream 120g
  • 1 tablespoon (15 ml) olive oil
  • 1 tablespoon (15 ml) unsalted butter
  • 1 cup panko breadcrumbs 65g
  • 1/4 cup fresh grated hard cheese 25g


Instructions

  1. Set your oven to 350°F (180°C) and position the rack in the middle.
  2. In a large frying pan, melt the 2 tablespoons of butter over medium heat. Once it has melted, add the finely chopped onion, crushed garlic, grated zucchini, Italian seasoning, salt, and pepper.
  3. Cook this mixture for 6-8 minutes until it becomes tender and aromatic. If there is excess liquid, remove it.
  4. After turning off the heat, incorporate the mozzarella cheese and sour cream, stirring until everything is well mixed. Transfer this blend into an 11×7 inch glass or baking dish, smoothing it out with a spatula.
  5. In a microwave, melt the 1 tablespoon of butter and combine it with olive oil. Pour this over the panko breadcrumbs, ensuring they are evenly coated.
  6. Distribute the buttered breadcrumbs over the zucchini mix in the dish. Add a sprinkle of grated hard cheese on top.
  7. Place in the oven for 20-25 minutes, or until the top is bubbly and a golden hue. For extra browning, switch to broil for an additional 1-2 minutes.
  8. Allow the casserole to sit for 5-10 minutes before serving it hot. Enjoy your meal!
