Description

Delicious oat peanut butter date balls that cater to vegan and gluten-free diets, combining sweetness and nutrition in a satisfying snack.


Ingredients

  • 1 cup pitted dates (approximately 12-13 dates)
  • ½ cup rolled oats
  • ¼ cup creamy unsalted peanut butter
  • 2 tablespoons dark chocolate chips or cacao nibs


Instructions

  1. Blend the pitted dates into a sticky paste. If dry, soak in hot water for about 10 minutes and drain before blending.
  2. Add rolled oats and peanut butter to the date paste. Blend until a thick dough forms.
  3. Mix in the dark chocolate chips or cacao nibs until evenly distributed.
  4. Scoop out portions of the mixture and roll them into balls. Lightly wet hands if the mixture is sticky.
  5. Aim for about 12 balls in total. Enjoy immediately or refrigerate for later.
