Ingredients
- 1 cup pitted dates (approximately 12-13 dates)
- ½ cup rolled oats
- ¼ cup creamy unsalted peanut butter
- 2 tablespoons dark chocolate chips or cacao nibs
Instructions
- Blend the pitted dates into a sticky paste. If dry, soak in hot water for about 10 minutes and drain before blending.
- Add rolled oats and peanut butter to the date paste. Blend until a thick dough forms.
- Mix in the dark chocolate chips or cacao nibs until evenly distributed.
- Scoop out portions of the mixture and roll them into balls. Lightly wet hands if the mixture is sticky.
- Aim for about 12 balls in total. Enjoy immediately or refrigerate for later.
