A delightful no-bake dessert featuring layers of creamy lemon pudding, whipped topping, and crunchy graham crackers. Perfect for summer gatherings!
Ingredients
- 1 box graham crackers
- 2 (3.4 oz) boxes instant lemon pudding
- 3 1/2 cups milk
- 1 (8 oz) container frozen whipped topping, thawed
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup lemon juice
- Zest of 1 lemon
Instructions
- Whisk together the lemon pudding mix and milk in a medium bowl until well combined.
- Let sit for 5 minutes to thicken.
- Fold in the whipped topping until smooth.
- Mix together powdered sugar, vanilla extract, lemon juice, and lemon zest in a separate bowl.
- Add the lemon mixture to the pudding mixture and stir until fully combined.
- Layer graham crackers on the bottom of a 9×13 inch dish.
- Spread half of the lemon pudding mixture over the graham crackers.
- Repeat with another layer of graham crackers and the remaining pudding mixture.
- Chill in the refrigerator for at least 4 hours before serving.
Notes
For best results, chill overnight to enhance flavor. Adding lemon slices on top can also add freshness.
