Ingredients

  • 3 Roma tomatoes seeds removed, diced
  • 2 avocados diced
  • 1/3 cup (80 ml) diced red onion
  • 15 ounce (425 g) s canned black beans 1 can, rinsed and drained
  • 15 ounce (425 g) s canned black eyed peas 1 can, rinsed and drained
  • 1 1/2 cup (360 ml) s froz en corn kernels thawed
  • 1 bell pepper diced, any color
  • 1 jalapeño seeds removed, finely diced
  • 1/3 cup (80 ml) chopped fresh cilantro
  • Tortilla chips for serving
  • 1/3 cup (80 ml) olive oil
  • 2 tablespoon (30 ml) s fresh lime juice
  • 2 tablespoon (30 ml) s apple cider vinegar
  • 1 teaspoon (5 ml) granulated sugar
  • 1/2 teaspoon (3 ml) salt
  • 1/2 teaspoon (3 ml) black pepper
  • 1/4 teaspoon (1 ml) garlic powder


Instructions

  1. Mix the diced tomatoes, avocado, red onion, black beans, black-eyed peas, thawed corn, chopped bell pepper, diced jalapeño, and cilantro in a large bowl. Ensure everything is thoroughly combined.
  2. In another bowl, blend the olive oil, lime juice, apple cider vinegar, granulated sugar, salt, black pepper, and garlic powder until well incorporated.
  3. Drizzle the dressing over the mixed ingredients and stir carefully to coat evenly.
  4. Store in the refrigerator. If you’re not serving right away, remember to mix well again before serving.
