Ingredients

  • – 12 ounces (340 g) spaghetti, whole wheat or your favorite brand
  • – 2 tablespoons (30 ml) olive oil
  • – 1 pound (450 g) cremini mushrooms, sliced
  • – 4-6 garlic cloves, chopped
  • – Salt and ground pepper, to taste
  • – 1/2 cup (50 g) grated Parmesan cheese, plus more for serving
  • – 2-3 tablespoons (30-45 ml) coarsely chopped fresh parsley leaves


Instructions

  1. Boil the spaghetti in salted water following the package instructions. Once cooked, save 2/3 cup of the cooking water and then strain the pasta.
  2. In the meantime, warm up the olive oil in a large pan over medium heat. Introduce the sliced mushrooms and sauté until they become soft and browned, about 5-7 minutes. Add the chopped garlic and season with salt and pepper; continue cooking for an additional minute to let the garlic become aromatic.
  3. With the pan still on the stove, incorporate the drained spaghetti into the mushrooms along with the grated Parmesan cheese and the saved pasta water.
  4. Use tongs to thoroughly combine everything until the pasta is coated with the sauce.
  5. Mix in the coarsely chopped fresh parsley. Serve right away and savor your dish!
