Ingredients

  • 2 cups (480 ml) all-purpose flour (240 grams)
  • 1 teaspoon (5 ml) baking powder (5 grams)

  • 1/2 teaspoon (3 ml) salt (2.5 grams)
  • 1 cup (240 ml) granulated sugar (200 grams)
  • 1/2 cup (120 ml) vegetable oil (120 milliliters)
  • 2 large eggs
  • 1 teaspoon (5 ml) vanilla extract (5 milliliters)
  • 1 cup (240 ml) grated yellow squash (about 130 grams)
  • Zest of 1 lemon
  • 1/4 cup (60 ml) lemon juice (60 milliliters)


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour a 9×5-inch loaf pan.
  3. In a large bowl, combine the all-purpose flour, baking powder, baking soda, and salt.
  4. In another bowl, whisk together the granulated sugar and vegetable oil until well combined.
  5. Add the eggs and vanilla extract to the sugar mixture, and mix until smooth.
  6. Stir in the grated yellow squash, lemon zest, and lemon juice.
  7. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
