Ingredients
- 2 cups (480 ml) all-purpose flour (240 grams)

- 1/2 teaspoon (3 ml) salt (2.5 grams)
- 1 cup (240 ml) granulated sugar (200 grams)
- 1/2 cup (120 ml) vegetable oil (120 milliliters)
- 2 large eggs
- 1 teaspoon (5 ml) vanilla extract (5 milliliters)
- 1 cup (240 ml) grated yellow squash (about 130 grams)
- Zest of 1 lemon
- 1/4 cup (60 ml) lemon juice (60 milliliters)
Instructions
- Preheat oven to 350°F (175°C).
- Grease and flour a 9×5-inch loaf pan.
- In a large bowl, combine the all-purpose flour, baking powder, baking soda, and salt.
- In another bowl, whisk together the granulated sugar and vegetable oil until well combined.
- Add the eggs and vanilla extract to the sugar mixture, and mix until smooth.
- Stir in the grated yellow squash, lemon zest, and lemon juice.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes.
- Remove the bread from the pan and transfer it to a wire rack to cool completely.
