Delightfully moist banana bread muffins made with ripe bananas, perfect for breakfast or a quick snack.
Ingredients
- 2-3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C). Grease a muffin tin.
- In a large bowl, mix the melted butter with the mashed bananas.
- Stir in the baking soda and salt until well combined.
- Add the sugar, beaten egg, and vanilla extract, mixing thoroughly.
- Fold in the flour gently until just combined to avoid overmixing.
- Pour the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow them to cool before serving.
Notes
Use a fork or potato masher to mash the bananas for consistency. Allow the melted butter to cool slightly before mixing it with bananas to avoid cooking the egg. You can add nuts or chocolate chips for extra flavor.
