Ingredients

  • Salmon fillets, 4 pieces
  • Soy sauce, 1/4 cup (60 ml)
  • Miso paste, 2 tablespoons (36 g)
  • Honey, 2 tablespoons (42 g)
  • Rice vinegar, 1 tablespoon (15 ml)
  • Sesame oil, 1 tablespoon (15 ml)
  • Garlic, 2 cloves, minced
  • Ginger, 1 teaspoon, grated (5 g)
  • Broccoli florets, 2 cups (300 g)
  • Cooked rice, 2 cups (370 g)
  • Green onions, 2, sliced
  • Sesame seeds, 1 tablespoon (9 g)
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, whisk together soy sauce, miso paste, honey, rice vinegar, sesame oil, minced garlic, and grated ginger.
  3. Place salmon fillets on a baking sheet lined with parchment paper.
  4. Brush the miso glaze generously over each salmon fillet.
  5. Season the salmon with salt and black pepper to taste.
  6. Place broccoli florets on the same baking sheet around the salmon.
  7. Drizzle a small amount of the miso glaze over the broccoli.
  8. Roast in the oven for 12-15 minutes, or until salmon is cooked through.
  9. While salmon and broccoli are roasting, warm the cooked rice on the stovetop or microwave.
  10. Once salmon and broccoli are done, remove from the oven.
  11. Divide rice evenly among four bowls.
  12. Top each bowl with a salmon fillet and roasted broccoli.
  13. Sprinkle sliced green onions and sesame seeds over each bowl.
  14. Serve immediately and enjoy.
