Description

Delicious no-bake Mint Chocolate Chip Protein Balls that combine invigorating mint and rich chocolate flavors for a nutritious snack.


Ingredients

  • 1/2 cup (50g) rolled oats
  • 1 cup (240g) almond butter
  • 2 tbsp (42g) honey
  • 1/4 cup (30g) vanilla protein powder
  • 1/4 tsp peppermint extract
  • 1/4 cup (40g) mini dark chocolate chips
  • 1–2 tbsp (15-30ml) unsweetened almond milk (if needed)


Instructions

  1. Combine the rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract in a large mixing bowl.
  2. Mix thoroughly until all ingredients come together.
  3. Add almond milk 1 tablespoon at a time if the mixture is too dry, until desired consistency is reached.
  4. Fold in the mini dark chocolate chips to ensure they distribute evenly throughout the mixture.
  5. Scoop portions with a tablespoon and roll them into balls.
  6. Place on a baking sheet lined with parchment paper and refrigerate for at least 20 minutes to firm up.
  7. Store in an airtight container in the refrigerator for up to a week.

Notes

Adjust the amount of almond milk for density preference and consider chilling almond butter before mixing for easier handling.
