Description

Indulge in fudgy chocolate brownies topped with refreshing mint frosting, creating a delightful dessert that bridges generations.

Ingredients

  • 1 cup unsalted butter (2 sticks)
  • 12 ounces semi-sweet chocolate chips
  • 4 large eggs
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 3/4 cup all-purpose flour
  • 3/4 cup unsalted butter, softened
  • 16 ounces powdered sugar
  • 2-4 tablespoons milk or cream
  • 1 teaspoon mint extract
  • Green food coloring
  • 1 cup chopped semi-sweet chocolate

Instructions

  1. In a large microwave-safe bowl, combine the unsalted butter and semi-sweet chocolate chips.
  2. Heat the mixture in 30-second intervals in the microwave, stirring after each until melted and smooth. Set aside to cool.
  3. In a separate bowl, whisk together the eggs and granulated sugar using an electric mixer on medium speed until well combined.
  4. Add the vanilla extract and mix until smooth.
  5. Once the chocolate mixture has cooled, carefully add it to the egg and sugar mixture, blending until fully combined.
  6. Gradually mix in the baking powder, salt, and all-purpose flour. Mix until just combined; avoid overmixing.
  7. Pour the brownie batter into the prepared pan, spreading it evenly.
  8. Bake for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the brownies to cool completely in the pan before frosting.

Notes

For a more decadent texture, consider adding extra chocolate chips to the brownie batter. Refrigerating the brownies can help with cutting and enhance the flavor.
