A healthier twist on the classic comfort food, this mini turkey meatloaf is flavorful, easy to prepare, and perfect for family dinners or meal prep.
Ingredients
- 1 tablespoon butter
- 1 yellow onion (finely diced)
- 3 cloves garlic (minced)
- 1 tablespoon fresh thyme (minced)
- 2 lb 93/7 ground turkey
- 2 eggs (lightly beaten)
- 1/2 cup seasoned breadcrumbs
- 2 tablespoons fresh parsley (minced)
- 1/4 teaspoon fresh ground pepper
- 1/2 teaspoon kosher salt
- 2 tablespoons Worcestershire sauce
- 1/3 cup ketchup
- 2 tablespoons balsamic vinegar
- 2 tablespoons brown sugar (packed)
Instructions
- Preheat the oven to 375°F. Line a baking sheet with parchment paper and set aside.
- In a small skillet, melt the butter over medium heat. Add the onions and sauté until tender, about 4 minutes. Stir in the minced garlic and thyme until fragrant, about 2 minutes. Transfer this mixture to a plate to cool for 5-10 minutes.
- In a large bowl, combine the turkey, eggs, breadcrumbs, parsley, salt, pepper, Worcestershire sauce, and cooled onion mixture. Toss until fully incorporated.
- Divide the mixture into eighths, forming small loaves. Arrange them evenly on the prepared pan.
- In a small bowl, mix the ketchup, balsamic vinegar, and brown sugar. Brush half the glaze over the tops of the meatloaves.
- Bake in the preheated oven for 15 minutes. Add the remaining glaze and continue cooking for another 5-10 minutes, or until the center reaches 150°F.
- Remove the meatloaves from the oven and let them rest for 5-10 minutes.
Notes
For added flavor, consider adding smoked paprika or cayenne for a hint of spice.
