Description

A healthier twist on the classic comfort food, this mini turkey meatloaf is flavorful, easy to prepare, and perfect for family dinners or meal prep.


Ingredients

  • 1 tablespoon butter
  • 1 yellow onion (finely diced)
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh thyme (minced)
  • 2 lb 93/7 ground turkey
  • 2 eggs (lightly beaten)
  • 1/2 cup seasoned breadcrumbs
  • 2 tablespoons fresh parsley (minced)
  • 1/4 teaspoon fresh ground pepper
  • 1/2 teaspoon kosher salt
  • 2 tablespoons Worcestershire sauce
  • 1/3 cup ketchup
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons brown sugar (packed)


Instructions

  1. Preheat the oven to 375°F. Line a baking sheet with parchment paper and set aside.
  2. In a small skillet, melt the butter over medium heat. Add the onions and sauté until tender, about 4 minutes. Stir in the minced garlic and thyme until fragrant, about 2 minutes. Transfer this mixture to a plate to cool for 5-10 minutes.
  3. In a large bowl, combine the turkey, eggs, breadcrumbs, parsley, salt, pepper, Worcestershire sauce, and cooled onion mixture. Toss until fully incorporated.
  4. Divide the mixture into eighths, forming small loaves. Arrange them evenly on the prepared pan.
  5. In a small bowl, mix the ketchup, balsamic vinegar, and brown sugar. Brush half the glaze over the tops of the meatloaves.
  6. Bake in the preheated oven for 15 minutes. Add the remaining glaze and continue cooking for another 5-10 minutes, or until the center reaches 150°F.
  7. Remove the meatloaves from the oven and let them rest for 5-10 minutes.

Notes

For added flavor, consider adding smoked paprika or cayenne for a hint of spice.
