Description

Delicious mini cheesecakes with layers of rich chocolate and creamy goodness, perfect for satisfying your chocolate cravings.


Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/4 cup cocoa powder
  • 1/2 cup chocolate chips (dark, milk, or semi-sweet)
  • 1/2 cup crushed chocolate cookies (for crust)
  • 3 tbsp butter, melted (for crust)
  • Chocolate ganache or melted chocolate for topping


Instructions

  1. Preheat the oven to 325°F (160°C). Line a muffin tin with cupcake liners.
  2. Mix the crushed chocolate cookies with melted butter. Press the mixture into the bottom of each liner.
  3. Beat the cream cheese and sugar until smooth in a large bowl.
  4. Add sour cream and vanilla, and mix well.
  5. Beat in eggs, one at a time, until fully incorporated.
  6. Divide the batter evenly into three bowls. In one bowl, mix cocoa powder; in another, stir in dark chocolate chips; in the last, add milk chocolate chips.
  7. Layer the mixtures in the cupcake liners to create a marbled effect.
  8. Bake for 20-25 minutes or until set.
  9. Allow the cheesecakes to cool and then refrigerate for at least 2 hours.
  10. Top with chocolate ganache before serving.

Notes

Chill the cheesecakes after baking for best flavor and texture. Consider adding espresso powder for a richer taste.
