Description

Delight in these stunning mini strawberry tartlets with a buttery crust, silky pastry cream, and fresh strawberries, perfect for any gathering.


Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup unsalted butter, cold and diced
  • 1/4 cup sugar
  • 1 egg yolk
  • 2 tablespoons ice water
  • 1 cup milk
  • 1/4 cup sugar
  • 2 tablespoons cornstarch
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and sliced


Instructions

  1. Combine the flour, diced cold butter, and sugar in a bowl until coarse crumbs form.
  2. Stir in the egg yolk and ice water until the dough forms.
  3. Roll out the dough and shape it into tartlet pans.
  4. Preheat the oven to 350°F (175°C) and bake the tartlet shells for about 10-12 minutes until golden brown.
  5. Heat the milk in a saucepan.
  6. Whisk together the sugar and cornstarch, then add the egg yolks and whisk until smooth.
  7. Incorporate the hot milk into the egg mixture and return everything to the saucepan.
  8. Cook over medium heat, stirring constantly until thickened.
  9. Remove from heat, stir in the vanilla extract, and let cool.
  10. Fill the cooled tart shells with pastry cream and top with sliced strawberries.

Notes

Ensure your butter is cold for a flakier crust. Chill the filled tartlets before serving for best results.
