Ingredients
- 1 cup all-purpose flour
- 1/4 cup unsalted butter, cold and diced
- 1/4 cup sugar
- 1 egg yolk
- 2 tablespoons ice water
- 1 cup milk
- 1/4 cup sugar
- 2 tablespoons cornstarch
- 2 egg yolks
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, hulled and sliced
Instructions
- Combine the flour, diced cold butter, and sugar in a bowl until coarse crumbs form.
- Stir in the egg yolk and ice water until the dough forms.
- Roll out the dough and shape it into tartlet pans.
- Preheat the oven to 350°F (175°C) and bake the tartlet shells for about 10-12 minutes until golden brown.
- Heat the milk in a saucepan.
- Whisk together the sugar and cornstarch, then add the egg yolks and whisk until smooth.
- Incorporate the hot milk into the egg mixture and return everything to the saucepan.
- Cook over medium heat, stirring constantly until thickened.
- Remove from heat, stir in the vanilla extract, and let cool.
- Fill the cooled tart shells with pastry cream and top with sliced strawberries.

Ensure your butter is cold for a flakier crust. Chill the filled tartlets before serving for best results.
