Description

Delightful Mini Black Forest Cheesecakes featuring a chocolate cookie crust and sweet cherry topping, capturing nostalgic family celebrations.


Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/2 cup cherry pie filling or cherry compote
  • 1/4 cup chocolate ganache (melted chocolate + cream)
  • Fresh cherries, for garnish
  • Dark chocolate squares or shavings


Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Prepare muffin tin or mini cheesecake molds by lining with parchment sleeves.
  3. Mix the chocolate cookie crumbs with melted butter until well combined.
  4. Press this mixture into the base of each mold.
  5. Beat the cream cheese and sugar in a large bowl until smooth.
  6. Add the eggs one at a time, mixing gently after each addition.
  7. Stir in sour cream and vanilla extract until well-blended.
  8. Pour the filling over the prepared crusts, filling each almost to the brim.
  9. Swirl in the cherry pie filling with a toothpick for a marbled effect.
  10. Bake for 18-20 minutes until centers are set but jiggle slightly.
  11. Cool completely and refrigerate for at least 4 hours or overnight.
  12. Drizzle with warm chocolate ganache before serving and garnish with fresh cherries and dark chocolate shavings.

Notes

These cheesecakes can be prepared ahead of time and stored in the refrigerator for up to 5 days. Experiment with different fruits for toppings.
