A healthy alternative to traditional pasta, this Million Dollar Spaghetti Squash Pasta combines the unique texture of spaghetti squash with creamy ricotta, zesty marinara, mozzarella, and Parmesan for a comforting, nutritious meal.
Ingredients
- 1 large spaghetti squash
- 1 cup ricotta cheese
- 2 cups marinara sauce
- 1 cup mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Place the squash halves cut-side down on a baking sheet.
- Bake for 30-40 minutes, or until the flesh is tender.
- Use a fork to scrape the flesh into spaghetti-like strands.
- In a mixing bowl, combine ricotta cheese, oregano, basil, salt, and pepper.
- In a baking dish, layer half of the spaghetti squash, half of the marinara sauce, and half of the ricotta mixture.
- Repeat the layers with the remaining spaghetti squash, marinara sauce, and ricotta mixture.
- Top with shredded mozzarella and grated Parmesan cheese.
- Bake for an additional 20-25 minutes, or until cheese is bubbly and golden.
