Description

A healthy alternative to traditional pasta, this Million Dollar Spaghetti Squash Pasta combines the unique texture of spaghetti squash with creamy ricotta, zesty marinara, mozzarella, and Parmesan for a comforting, nutritious meal.


Ingredients

  • 1 large spaghetti squash
  • 1 cup ricotta cheese
  • 2 cups marinara sauce
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Place the squash halves cut-side down on a baking sheet.
  4. Bake for 30-40 minutes, or until the flesh is tender.
  5. Use a fork to scrape the flesh into spaghetti-like strands.
  6. In a mixing bowl, combine ricotta cheese, oregano, basil, salt, and pepper.
  7. In a baking dish, layer half of the spaghetti squash, half of the marinara sauce, and half of the ricotta mixture.
  8. Repeat the layers with the remaining spaghetti squash, marinara sauce, and ricotta mixture.
  9. Top with shredded mozzarella and grated Parmesan cheese.
  10. Bake for an additional 20-25 minutes, or until cheese is bubbly and golden.
  11. Serve hot and enjoy your healthy spaghetti squash dish!

Notes

For added texture, consider mixing in sautéed vegetables like spinach or mushrooms with the ricotta.
