  • 1 tablespoon (15 ml) coconut flour (7.5 grams)
  • 1/2 teaspoon (3 ml) baking powder (2 grams)
  • 1/2 teaspoon (3 ml) ground cinnamon (1.3 grams)
  • 1 tablespoon (15 ml) unsalted butter, melted (14 grams)
  • 1 large egg
  • 1 tablespoon (15 ml) erythritol or preferred sweetener (12 grams)
  • 1/4 teaspoon (1 ml) vanilla extract (1.25 milliliters)
  • For the frosting:
  • 1 tablespoon (15 ml) cream cheese, softened (14 grams)
  • 1 tablespoon (15 ml) powdered erythritol or preferred sweetener (12 grams)
  • 1/4 teaspoon (1 ml) vanilla extract (1.25 milliliters)
  • 1 teaspoon (5 ml) heavy cream (5 milliliters)

Instructions

  1. In a small bowl, combine almond flour, coconut flour, baking powder, and ground cinnamon.
  2. Add melted butter, egg, erythritol, and vanilla extract to the dry ingredients.
  3. Mix thoroughly until a smooth batter forms.
  4. Pour the batter into a microwave-safe mug or small bowl.
  5. Microwave on high for 60 to 90 seconds, or until the center is set.
  6. Let the cinnamon roll cool slightly in the mug.
  7. In a separate bowl, mix softened cream cheese, powdered erythritol, vanilla extract, and heavy cream.
  8. Stir until the frosting is smooth and creamy.
  9. Spread the frosting over the cooled cinnamon roll.
  10. Serve and enjoy immediately.

Notes

  • Thoroughly blend dry ingredients before adding wet ones for a uniform batter.
  • Avoid overcooking to keep the cinnamon roll moist.
  • Adjust frosting sweetness with powdered erythritol; add more cream for creamier texture.
