Ingredients

  • 1 lb (454 g) ground beef
  • 1 chopped onion
  • 1/2 tsp (2.5 ml) salt and pepper
  • 2 tsp (10 ml) chili powder
  • 1 tsp (5 ml) each cumin and dried cilantro
  • 1/4 tsp (1.25 ml) cayenne
  • 1 tbsp (15 ml) minced garlic
  • 16 Small Fajita size flour tortillas
  • 1 can refried beans
  • Taco sauce
  • 2 cups (200 g) shredded Colby Jack cheese
  • Diced tomatoes
  • Chopped green onions
  • Vegetable oil


Instructions

  1. Cook the beef in a large pan over medium-high heat until browned. Incorporate a chopped onion. Once the beef is fully browned, remove any excess fat.
  2. Flavor the beef mixture with salt, pepper, chili powder, cumin, dried cilantro, and cayenne. Stir in the minced garlic.
  3. As the beef cooks, lightly fry the flour tortillas in a separate pan over medium heat. Add just enough vegetable oil to coat the bottom of the pan. Cook the tortillas on both sides until they turn golden brown, about 1-2 minutes per side. Once done, place them on paper towels to soak up extra oil.
  4. Warm up the refried beans to make them more spreadable. Layer the refried beans on the flour tortillas. Add a portion of the cooked beef. Sprinkle with some cheese, then cover with another fried tortilla. Drizzle taco sauce over the top tortilla and sprinkle more cheese on top.
  5. Bake in a preheated oven at 400°F for approximately 10 minutes. Garnish with diced tomatoes and chopped green onions. Enjoy your meal!
