Ingredients
- 1 lb (454 g) ground beef
- 1 chopped onion
- 1/2 tsp (2.5 ml) salt and pepper
- 2 tsp (10 ml) chili powder
- 1 tsp (5 ml) each cumin and dried cilantro
- 1/4 tsp (1.25 ml) cayenne
- 1 tbsp (15 ml) minced garlic
- 16 Small Fajita size flour tortillas
- 1 can refried beans
- Taco sauce
- 2 cups (200 g) shredded Colby Jack cheese
- Diced tomatoes
- Chopped green onions
- Vegetable oil
Instructions
- Cook the beef in a large pan over medium-high heat until browned. Incorporate a chopped onion. Once the beef is fully browned, remove any excess fat.
- Flavor the beef mixture with salt, pepper, chili powder, cumin, dried cilantro, and cayenne. Stir in the minced garlic.
- As the beef cooks, lightly fry the flour tortillas in a separate pan over medium heat. Add just enough vegetable oil to coat the bottom of the pan. Cook the tortillas on both sides until they turn golden brown, about 1-2 minutes per side. Once done, place them on paper towels to soak up extra oil.
- Warm up the refried beans to make them more spreadable. Layer the refried beans on the flour tortillas. Add a portion of the cooked beef. Sprinkle with some cheese, then cover with another fried tortilla. Drizzle taco sauce over the top tortilla and sprinkle more cheese on top.
- Bake in a preheated oven at 400°F for approximately 10 minutes. Garnish with diced tomatoes and chopped green onions. Enjoy your meal!
