Ingredients
- 14 ounce (397 g) bag coleslaw mix
- 1/2 cup (120 ml) red pepper diced
- 1/2 cup (120 ml) black beans drained and rinsed
- 1/2 cup (120 ml) corn I like using grilled or skillet-charred corn
- 1/2 cup (120 ml) chopped cilantro
- 1 jalapeño minced
- 3/4 cup (180 ml) mayo
- 1/4 cup (60 ml) sour cream
- 1 1/2 Tablespoon (23 ml) s taco seasoning
- 2 Tablespoon (30 ml) s lime juice
Instructions
- In a big bowl, mix together the coleslaw mix, diced red pepper, black beans, charred corn, chopped cilantro, and minced jalapeño.
- In another smaller bowl, blend the mayo, sour cream, taco seasoning, and lime juice.
- Pour the blended mayo mixture over the coleslaw mix and mix thoroughly.
