Ingredients

  • 14 ounce (397 g) bag coleslaw mix
  • 1/2 cup (120 ml) red pepper diced
  • 1/2 cup (120 ml) black beans drained and rinsed
  • 1/2 cup (120 ml) corn I like using grilled or skillet-charred corn
  • 1/2 cup (120 ml) chopped cilantro
  • 1 jalapeño minced
  • 3/4 cup (180 ml) mayo
  • 1/4 cup (60 ml) sour cream
  • 1 1/2 Tablespoon (23 ml) s taco seasoning
  • 2 Tablespoon (30 ml) s lime juice


Instructions

  1. In a big bowl, mix together the coleslaw mix, diced red pepper, black beans, charred corn, chopped cilantro, and minced jalapeño.
  2. In another smaller bowl, blend the mayo, sour cream, taco seasoning, and lime juice.
  3. Pour the blended mayo mixture over the coleslaw mix and mix thoroughly.
