Ingredients

  • 1 1/2 pounds (680 g) cod fillet
  • 1 small red onion OR large shallot, sliced
  • 3 cloves garlic crushed
  • 1 pound (454 g) cherry tomatoes halved
  • 1/4 cup (60 ml) sliced black olives
  • 1 tablespoon (15 ml) olive oil
  • 1 teaspoon (5 ml) Italian seasoning
  • Salt & pepper to taste
  • 1/4 cup (60 ml) water
  • 4 tablespoon (60 ml) s butter chopped


Instructions

  1. Preparation: Set your oven to 400°F and allow it to preheat. Lightly coat a rectangular baking dish with a bit of oil, ensuring there’s enough room for the cod and tomatoes, and then place the fish inside.
  2. Add vegetables: Evenly distribute the sliced onion, crushed garlic, halved cherry tomatoes, and black olives around the cod in the dish.
  3. Season: Drizzle olive oil over all the ingredients in the dish. Sprinkle Italian seasoning over the top and add salt and pepper according to your taste.
  4. Finish and bake: Add water to the dish. Dot the top with pieces of butter, ensuring they’re spread out. Bake the dish for 15-20 minutes, or until both the fish and tomatoes are thoroughly cooked.
