Description

Ingredients

  • 4 large portobello mushrooms
  • 1 tablespoon olive oil (15 ml)
  • 1 clove garlic, minced
  • 1 can chickpeas, drained and rinsed (15 ounces (425 g) or 425 grams)
  • 1 cup (240 ml) cherry tomatoes, halved (150 grams)
  • 1/4 cup (60 ml) black olives, pitted and chopped (40 grams)
  • 1/4 cup (60 ml) red onion, finely chopped (40 grams)
  • 2 tablespoons (30 ml) fresh parsley, chopped (8 grams)
  • 2 tablespoons (30 ml) fresh mint, chopped (8 grams)
  • 1 teaspoon (5 ml) dried oregano (1 gram)
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup (60 ml) crumbled goat cheese (optional) (40 grams)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Clean the portobello mushrooms and remove their stems.
  3. Brush the mushroom caps with olive oil on both sides.
  4. Place the mushrooms gill-side up on a baking sheet.
  5. Bake the mushrooms for 10 minutes in the preheated oven.
  6. While the mushrooms are baking, heat the remaining olive oil in a skillet over medium heat.
  7. Add the minced garlic to the skillet and sauté for 1 minute.
  8. Add the chickpeas to the skillet and cook for 3-4 minutes, stirring occasionally.
  9. Remove the skillet from heat and add the cherry tomatoes, Kalamata olives, red onion, parsley, mint, and dried oregano.
  10. Season the mixture with salt and black pepper to taste.
  11. Remove the mushrooms from the oven and evenly divide the chickpea mixture among them.
  12. Optionally, sprinkle crumbled feta cheese over the stuffed mushrooms.
  13. Return the mushrooms to the oven and bake for an additional 10 minutes.
  14. Remove from the oven and let cool slightly before serving.
