Ingredients

  • 2 lbs (900 g) chicken breast, diced
  • 2 medium zucchinis, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 cup (240 ml) beef broth
  • 1 tablespoon (15 ml) vegetable oil
  • 1 teaspoon (5 g) dried oregano
  • 1 teaspoon (5 g) dried basil
  • 1/2 teaspoon (2.5 g) black pepper
  • 1/2 teaspoon (2.5 g) salt
  • 1/2 cup (100 g) crumbled goat cheese
  • 1/4 cup (15 g) fresh parsley, chopped


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat.
  3. Add the diced chicken breast to the skillet.
  4. Cook the chicken until browned on all sides, about 5-7 minutes.
  5. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add the chopped onion, red bell pepper, and yellow bell pepper.
  7. Sauté the vegetables for 3-4 minutes until they start to soften.
  8. Add the minced garlic and cook for an additional minute.
  9. Stir in the sliced zucchinis and cherry tomatoes.
  10. Cook the mixture for another 3 minutes, stirring occasionally.
  11. Add the chicken broth, dried oregano, dried basil, black pepper, and salt to the skillet.
  12. Stir well to combine all ingredients.
  13. Return the cooked chicken to the skillet and mix thoroughly.
  14. Transfer the entire mixture to a large baking dish.
  15. Sprinkle the crumbled feta cheese evenly over the top.
  16. Cover the dish with aluminum foil.
  17. Bake in the preheated oven for 25 minutes.
  18. Remove the foil and bake for an additional 10 minutes.
  19. Remove the dish from the oven and let it rest for 5 minutes.
  20. Garnish with chopped fresh parsley before serving.
