Ingredients
- 2 lbs (900 g) chicken breast, diced
- 2 medium zucchinis, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 cup (240 ml) beef broth
- 1 tablespoon (15 ml) vegetable oil
- 1 teaspoon (5 g) dried oregano
- 1 teaspoon (5 g) dried basil
- 1/2 teaspoon (2.5 g) black pepper
- 1/2 teaspoon (2.5 g) salt
- 1/2 cup (100 g) crumbled goat cheese
- 1/4 cup (15 g) fresh parsley, chopped
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat.
- Add the diced chicken breast to the skillet.
- Cook the chicken until browned on all sides, about 5-7 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion, red bell pepper, and yellow bell pepper.
- Sauté the vegetables for 3-4 minutes until they start to soften.
- Add the minced garlic and cook for an additional minute.
- Stir in the sliced zucchinis and cherry tomatoes.
- Cook the mixture for another 3 minutes, stirring occasionally.
- Add the chicken broth, dried oregano, dried basil, black pepper, and salt to the skillet.
- Stir well to combine all ingredients.
- Return the cooked chicken to the skillet and mix thoroughly.
- Transfer the entire mixture to a large baking dish.
- Sprinkle the crumbled feta cheese evenly over the top.
- Cover the dish with aluminum foil.
- Bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes.
- Remove the dish from the oven and let it rest for 5 minutes.
- Garnish with chopped fresh parsley before serving.
