Description

Comforting meaty enchiladas filled with seasoned beef, cheese, and topped with fresh ingredients, perfect for gatherings.


Ingredients

  • 1 pound of ground beef
  • 2 cups of red enchilada sauce
  • 8 corn tortillas
  • 2 cups of shredded cheese (either cheddar or a Mexican blend)
  • 1 small onion, chopped
  • 1 cup of fresh toppings (sour cream, guacamole, diced tomatoes, and cilantro)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the chopped onion until translucent. Add the ground beef and cook until browned. Drain excess fat.
  3. Stir in 1 cup of the red enchilada sauce and simmer for 5 minutes.
  4. In a baking dish, spread a thin layer of the remaining enchilada sauce.
  5. Take a tortilla, fill it with the beef mixture, sprinkle some cheese, and roll it up. Place seam-side down in the baking dish. Repeat with remaining tortillas.
  6. Pour the rest of the enchilada sauce over the rolled tortillas and top with remaining cheese.
  7. Bake for 20-25 minutes until cheese is melted and bubbly.
  8. Serve hot with your choice of fresh toppings.

Notes

Use freshly made or high-quality enchilada sauce for better flavor. Toast tortillas lightly for easier rolling.
