Comforting meaty enchiladas filled with seasoned beef, cheese, and topped with fresh ingredients, perfect for gatherings.
Ingredients
- 1 pound of ground beef
- 2 cups of red enchilada sauce
- 8 corn tortillas
- 2 cups of shredded cheese (either cheddar or a Mexican blend)
- 1 small onion, chopped
- 1 cup of fresh toppings (sour cream, guacamole, diced tomatoes, and cilantro)
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, cook the chopped onion until translucent. Add the ground beef and cook until browned. Drain excess fat.
- Stir in 1 cup of the red enchilada sauce and simmer for 5 minutes.
- In a baking dish, spread a thin layer of the remaining enchilada sauce.
- Take a tortilla, fill it with the beef mixture, sprinkle some cheese, and roll it up. Place seam-side down in the baking dish. Repeat with remaining tortillas.
- Pour the rest of the enchilada sauce over the rolled tortillas and top with remaining cheese.
- Bake for 20-25 minutes until cheese is melted and bubbly.
- Serve hot with your choice of fresh toppings.
Notes
Use freshly made or high-quality enchilada sauce for better flavor. Toast tortillas lightly for easier rolling.
