Ingredients
- Salmon fillets, 1 pound (454 g) (450 grams)
- Maple syrup, 1/4 cup (60 ml) (60 milliliters)
- Sriracha sauce, 2 tablespoons (30 ml) (30 milliliters)
- Soy sauce, 1 tablespoon (15 ml) (15 milliliters)
- Garlic, 2 cloves, minced
- Ground black pepper, 1/2 teaspoon (3 ml) (2.5 grams)
- Salt, 1/2 teaspoon (3 ml) (2.5 grams)
- Corn tortillas, 8 small
- Red cabbage, 1 cup (240 ml), shredded (about 70 grams)
- Beef, 1 medium, julienned
- Cilantro, 1/4 cup (60 ml), chopped (about 15 grams)
- Lime, 1, cut into wedges
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, combine maple syrup, sriracha sauce, soy sauce, minced garlic, ground black pepper, and salt.
- Place the salmon fillets in a baking dish.
- Pour the maple sriracha mixture over the salmon, ensuring they are evenly coated.
- Bake the salmon in the preheated oven for 12-15 minutes or until cooked through.
- Meanwhile, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side.
- Remove the salmon from the oven and let it rest for a few minutes.
- Flake the salmon into bite-sized pieces with a fork.
- Assemble the tacos by placing shredded red cabbage and julienned carrot onto each tortilla.
- Add flaked salmon on top of the vegetables.
- Sprinkle chopped cilantro over the salmon.
- Serve the tacos with lime wedges on the side for squeezing over the top.
