Ingredients

  • Salmon fillets, 1 pound (454 g) (450 grams)
  • Maple syrup, 1/4 cup (60 ml) (60 milliliters)
  • Sriracha sauce, 2 tablespoons (30 ml) (30 milliliters)
  • Soy sauce, 1 tablespoon (15 ml) (15 milliliters)
  • Garlic, 2 cloves, minced
  • Ground black pepper, 1/2 teaspoon (3 ml) (2.5 grams)
  • Salt, 1/2 teaspoon (3 ml) (2.5 grams)
  • Corn tortillas, 8 small
  • Red cabbage, 1 cup (240 ml), shredded (about 70 grams)
  • Beef, 1 medium, julienned
  • Cilantro, 1/4 cup (60 ml), chopped (about 15 grams)
  • Lime, 1, cut into wedges


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, combine maple syrup, sriracha sauce, soy sauce, minced garlic, ground black pepper, and salt.
  3. Place the salmon fillets in a baking dish.
  4. Pour the maple sriracha mixture over the salmon, ensuring they are evenly coated.
  5. Bake the salmon in the preheated oven for 12-15 minutes or until cooked through.
  6. Meanwhile, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side.
  7. Remove the salmon from the oven and let it rest for a few minutes.
  8. Flake the salmon into bite-sized pieces with a fork.
  9. Assemble the tacos by placing shredded red cabbage and julienned carrot onto each tortilla.
  10. Add flaked salmon on top of the vegetables.
  11. Sprinkle chopped cilantro over the salmon.
  12. Serve the tacos with lime wedges on the side for squeezing over the top.
