Ingredients
- 2 medium-large delicata squash (900g)
- 2 tbsp (30 ml) olive oil
- 2 tbsp (30 ml) maple syrup
- 1 tsp (5 ml) cinnamon
- Salt, to taste
- 1/2 cup raw pecans (65g)
- 1/4 cup (60 ml) crumbled white cheese
- 1 tbsp (15 ml) fresh thyme (or 1 tsp (5 ml) dried)
Instructions
- Begin by setting your oven to 400°F and laying parchment paper on a big baking tray.
- Take the squash and slice off the tough ends using a large kitchen knife. Stand each squash on one of its flat sides.
- Carefully slice each squash lengthwise down the middle, creating two long halves. Scoop out the seeds and any excess flesh with a spoon.
- After removing the seeds, turn the squash halves over so they rest flat side down. Slice each half into 3/4-inch thick crescent shapes.
- Place the squash crescents into a large bowl. Drizzle with olive oil and maple syrup, then sprinkle with cinnamon and salt. Mix everything thoroughly and spread it out on the prepared baking tray. Alternatively, you can mix directly on the tray if you prefer.
- Arrange the squash in a single, even layer on the tray. Bake in the oven for 25 to 30 minutes until they are golden brown and can be easily pierced with a fork.
- About 7 minutes before the squash is done, place the pecans on a separate small tray and toast them in the oven until they are aromatic, taking care not to burn them. Once done, roughly chop the pecans on a cutting board.
- After cooking, serve the roasted squash with a topping of toasted pecans, crumbled white cheese, and thyme. Enjoy the dish while hot!
