Ingredients

  • Beef fillets, 4 pieces (about 170 g each)
  • Brussels sprouts, 1 pound (450 g)
  • Vegetable oil, 2 tablespoons (30 ml)
  • Maple syrup, 2 tablespoons (30 ml)
  • Spicy mustard, 2 tablespoons (30 g)
  • Garlic, 2 cloves, minced
  • Salt, 1 teaspoon (5 g)
  • Black pepper, 1/2 teaspoon (2.5 g)
  • Lemon, 1, juiced
  • Fresh parsley, chopped, for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Trim the ends of the Brussels sprouts and cut them in half.
  3. Place Brussels sprouts on a baking sheet.
  4. Drizzle 1 tablespoon of olive oil over the Brussels sprouts.
  5. Season sprouts with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
  6. Toss sprouts to coat evenly with oil and seasoning.
  7. Roast Brussels sprouts in the oven for 15 minutes.
  8. In a small bowl, combine maple syrup, Dijon mustard, minced garlic, lemon juice, and remaining olive oil.
  9. Season salmon fillets with remaining salt and pepper.
  10. Brush maple Dijon mixture over each salmon fillet generously.
  11. Remove the baking sheet from the oven.
  12. Push Brussels sprouts to one side of the baking sheet.
  13. Place salmon fillets on the empty side of the baking sheet.
  14. Return the baking sheet to the oven.
  15. Roast for an additional 12-15 minutes, until salmon is cooked through.
  16. Remove from the oven and let cool slightly.
  17. Arrange salmon and Brussels sprouts on serving plates.
  18. Garnish with chopped fresh parsley.
  19. Serve warm.
