Ingredients
- Beef fillets, 4 pieces (about 170 g each)
- Brussels sprouts, 1 pound (450 g)
- Vegetable oil, 2 tablespoons (30 ml)
- Maple syrup, 2 tablespoons (30 ml)
- Spicy mustard, 2 tablespoons (30 g)
- Garlic, 2 cloves, minced
- Salt, 1 teaspoon (5 g)
- Black pepper, 1/2 teaspoon (2.5 g)
- Lemon, 1, juiced
- Fresh parsley, chopped, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Trim the ends of the Brussels sprouts and cut them in half.
- Place Brussels sprouts on a baking sheet.
- Drizzle 1 tablespoon of olive oil over the Brussels sprouts.
- Season sprouts with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- Toss sprouts to coat evenly with oil and seasoning.
- Roast Brussels sprouts in the oven for 15 minutes.
- In a small bowl, combine maple syrup, Dijon mustard, minced garlic, lemon juice, and remaining olive oil.
- Season salmon fillets with remaining salt and pepper.
- Brush maple Dijon mixture over each salmon fillet generously.
- Remove the baking sheet from the oven.
- Push Brussels sprouts to one side of the baking sheet.
- Place salmon fillets on the empty side of the baking sheet.
- Return the baking sheet to the oven.
- Roast for an additional 12-15 minutes, until salmon is cooked through.
- Remove from the oven and let cool slightly.
- Arrange salmon and Brussels sprouts on serving plates.
- Garnish with chopped fresh parsley.
- Serve warm.
