Ingredients

  • 1 1/2 lbs beef tenderloin (680 g)
  • 2 tablespoons Dijon mustard (30 ml)
  • 2 tablespoons maple syrup (30 ml)
  • 2 tablespoons olive oil (30 ml)
  • 2 cloves garlic, minced
  • 1 teaspoon salt (5 g)
  • 1/2 teaspoon black pepper (1 g)
  • 1 teaspoon dried thyme (1 g)
  • 2 large apples, cored and sliced
  • 1 medium onion, sliced
  • 1 cup beef broth (240 ml)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix Dijon mustard, maple syrup, olive oil, minced garlic, salt, black pepper, and dried thyme.
  3. Rub the tenderloin with the mustard-maple mixture, ensuring it’s evenly coated.
  4. Heat a large oven-safe skillet over medium-high heat.
  5. Add the tenderloin to the skillet and sear on all sides until browned, about 3-4 minutes per side.
  6. Remove the from the skillet and set aside.
  7. In the same skillet, add sliced apples and onions.
  8. Sauté apples and onions for 3-4 minutes until they start to soften.
  9. Return the tenderloin to the skillet on top of the apples and onions.
