- 21 oz can of lemon pie filling or homemade equivalent
Instructions
- Preheat the oven to 350°F and grease a baking dish.
- Combine flour, baking powder, salt, and sugar in a mixing bowl. Whisk to combine. Add buttermilk, vanilla, and lemon extract, stirring until smooth.
- Melt the butter in the baking dish in the oven. Once melted, pour the batter over the butter without stirring.
- Spoon the lemon pie filling evenly over the batter.
- Place the baking dish in the preheated oven and bake for about 40-45 minutes or until golden brown.
- Allow the cobbler to cool for 10-15 minutes before cutting.
