Ingredients
- 1½ lbs chicken breasts, cubed
- Onion powder, garlic powder, salt to taste
- 2 tbsp (30 ml) olive oil
- 1 lb (454 g) broccoli, cut into small florets
- 8 oz (227 g) alfredo sauce (see Notes below for homemade version)
- 1 cup (240 ml) cottage cheese, drained

- 1½ cups shredded parmesan cheese
- 1½ cups shredded mozzarella cheese
Instructions
- Set your oven to 375°F to preheat. Apply a thin layer of olive oil to a 9×13″ baking dish for greasing.
- Blend the cottage cheese in a small food processor until it is smooth. Combine this with the alfredo sauce along with garlic powder, onion powder, and salt to your preference.
- Generously coat the chicken cubes with onion powder, garlic powder, and salt. Warm the olive oil in a large pan over medium-high heat. Cook the chicken until it is browned on the sides, then take it off the heat.
- Distribute the broccoli florets evenly at the bottom of the prepared baking dish. Follow this with an even layer of the cooked chicken pieces. Sprinkle the shredded parmesan cheese over the chicken. Pour the alfredo-cottage cheese mixture on top, and finish with an even layer of shredded mozzarella cheese. Bake for 35 minutes, and consider broiling briefly to achieve a golden brown top.
