Ingredients
- 1 tablespoon olive oil (15 ml)
- 2 medium zucchinis, sliced (about 10 ounces (283 g) or 285 grams)
- 8 ounces (227 g) mushrooms, sliced (225 grams)
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon soy sauce (15 ml)
- 1 teaspoon sesame oil (5 ml)
- Salt, to taste
- Black pepper, to taste
- Optional: 1 teaspoon (5 ml) paprika (2 grams)
- Optional: 2 tablespoons (30 ml) chopped green onions (15 grams)
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium heat.
- Add the sliced onion to the skillet and sauté for 2-3 minutes until it begins to soften.
- Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
- Add the sliced mushrooms to the skillet and cook for 4-5 minutes, stirring occasionally, until they start to brown.
- Add the sliced zucchini to the skillet and stir to combine with the other vegetables.
- Pour in 1 tablespoon soy sauce and 1 teaspoon sesame oil, stirring well to coat the vegetables.
- Season the stir fry with salt and black pepper to taste.
- If using, add 1 teaspoon red pepper flakes for extra heat and stir to incorporate.
- Continue cooking for another 3-4 minutes until the zucchini is tender but still crisp.
- Remove the skillet from heat and, if desired, sprinkle with 2 tablespoons chopped green onions.
- Serve the stir fry hot.
