Description

Ingredients

  • 1 tablespoon olive oil (15 ml)
  • 2 medium zucchinis, sliced (about 10 ounces (283 g) or 285 grams)
  • 8 ounces (227 g) mushrooms, sliced (225 grams)
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce (15 ml)
  • 1 teaspoon sesame oil (5 ml)
  • Salt, to taste
  • Black pepper, to taste
  • Optional: 1 teaspoon (5 ml) paprika (2 grams)
  • Optional: 2 tablespoons (30 ml) chopped green onions (15 grams)


Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium heat.
  2. Add the sliced onion to the skillet and sauté for 2-3 minutes until it begins to soften.
  3. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  4. Add the sliced mushrooms to the skillet and cook for 4-5 minutes, stirring occasionally, until they start to brown.
  5. Add the sliced zucchini to the skillet and stir to combine with the other vegetables.
  6. Pour in 1 tablespoon soy sauce and 1 teaspoon sesame oil, stirring well to coat the vegetables.
  7. Season the stir fry with salt and black pepper to taste.
  8. If using, add 1 teaspoon red pepper flakes for extra heat and stir to incorporate.
  9. Continue cooking for another 3-4 minutes until the zucchini is tender but still crisp.
  10. Remove the skillet from heat and, if desired, sprinkle with 2 tablespoons chopped green onions.
  11. Serve the stir fry hot.
