A healthier take on the classic meatloaf, made with lean ground beef and keto-friendly ingredients for a low carb, guilt-free meal.
Ingredients
- 2 lbs Lean Ground Beef
- 1/2 cup Onions – Finely Chopped
- 2 large Eggs
- 1/3 cup Sugar Free Ketchup
- 2 tsp Prepared Mustard
- 1/2 tsp Salt
- 1/4 tsp Ground Black Pepper
- 4 slices Keto Bread
- 1/4 cup Parmesan Cheese
- 1/4 cup Sugar Free Ketchup (for sauce)
- 1 Tbsp Prepared Mustard (for sauce)
- 2 tsp Splenda Granulated Sweetener (for sauce)
- Fresh herbs for garnish (optional)
Instructions
- Preheat the oven to 400°F.
- Toast the 4 slices of keto bread until golden brown.
- Using a food processor, pulse the toasted keto bread into fine breadcrumbs.
- In a large mixing bowl, combine the ground beef, finely chopped onions, eggs, sugar-free ketchup, prepared mustard, Parmesan cheese, salt, and pepper. Mix well until everything is uniformly blended.
- Press the meat mixture into a loaf pan and smooth out the top for even cooking.
- In a small mixing bowl, combine the sauce ingredients—the sugar-free ketchup, prepared mustard, and Splenda sweetener.
- Spread the sauce evenly across the top of the meatloaf.
- Bake in the preheated oven for approximately 45 minutes until the meatloaf reaches a perfect cook.
- Remove the meatloaf from the oven and allow it to sit for 10-15 minutes before serving.
- Carefully remove the meatloaf from the pan and transfer it to a cutting board. Slice into eight equal portions and serve hot.
Notes
For added moisture, consider including grated zucchini or mushrooms into your meat mixture. Fresh herbs can elevate the dish further.
