- 1 cup (240 ml) powdered sugar (120 grams)
- 2 tablespoons (30 ml) lemon juice (30 milliliters)
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9×5-inch loaf pan with cooking spray or butter.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, beat the sugar and eggs until they are light and fluffy.
- Add the vegetable oil, yogurt, lemon zest, and lemon juice to the egg mixture, and mix well.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Gently fold in the grated zucchini until evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
