  • 2 teaspoons baking powder

  • ½ cup cane sugar
  • 1 tablespoon lemon zest (plus more for sprinkling)
  • ¾ cup whole milk Greek yogurt
  • ½ cup extra-virgin olive oil (plus more for the pan)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Lemon glaze for drizzling


Instructions

  1. Preheat your oven to 350°F and oil an 8×4-inch loaf pan with olive oil.
  2. Whisk together all-purpose flour, almond flour, baking powder, and sea salt in a large bowl.
  3. Mix cane sugar and lemon zest in another bowl, whisking until fragrant. Incorporate Greek yogurt, olive oil, eggs, and vanilla extract until combined.
  4. Pour the dry mixture into the wet ingredients and stir gently until just combined.
  5. Transfer the batter into the prepared loaf pan.
