Lemon rice combines the bright, zesty notes of lemon with fragrant basmati rice, creating a delightful, comforting dish perfect for any occasion.
Ingredients
- 2 cups long-grain white rice, such as basmati
- 4 tablespoons butter
- 1/2 teaspoon salt
- 3 cups water
- Zest and juice of 1 lemon
- 1/8 teaspoon turmeric (optional)
- 1 tablespoon chopped parsley (for garnish)
Instructions
- Rinse the rice in a bowl or fine mesh strainer under cold water until the water runs clear, about 1 minute.
- In a medium pot, melt the butter over medium heat. Add the rinsed rice and salt, and cook for about 3 minutes, stirring occasionally, until the rice is slightly toasted.
- Add the water, lemon zest, and lemon juice to the pot. Bring the mixture to a boil. Once boiling, reduce the heat to low and cover. Let the rice simmer for 15 minutes.
- After 15 minutes, remove the pot from heat and let the rice sit, covered, for 5-10 minutes.
- If desired, sprinkle turmeric over the rice and fluff with a fork to combine. Garnish with chopped parsley before serving.

For a unique twist, consider adding sautéed vegetables or roasted nuts for added crunch.
