Ingredients

  • 2 large eggs
  • 1/2 cup (120 ml) vegetable oil

  • 3 Tbsp (45 ml) lemon juice, (1 large lemon)
  • 1 cup (240 ml) granulated sugar
  • 1 tsp (5 ml) baking powder
  • 1/2 tsp (3 ml) baking soda
  • 1/2 tsp (3 ml) salt
  • 2 cup (480 ml) s all-purpose flour
  • 2 cup (480 ml) s lightly packed shredded zucchini
  • 3 Tbsp (45 ml) poppy seeds
  • 1 1/2 cup (360 ml) s powdered sugar
  • 2 Tbsp (30 ml) lemon juice, or a mixture of lemon juice and milk (or cream) to thin


Instructions

  1. Preheat your oven to 350°F and prepare a 9×5 loaf pan by greasing it. For easier removal after baking, you may also line it with parchment paper.
  2. In a large bowl, combine the eggs, vegetable oil, lemon zest, lemon juice, and granulated sugar, whisking until the mixture is smooth and well-blended.
  3. Add the baking powder, baking soda, and salt to the mixture, and whisk until integrated.
  4. Gradually incorporate the all-purpose flour, mixing until everything is combined and no dry flour remains visible.
  5. Carefully mix in the shredded zucchini and poppy seeds.
  6. Pour the prepared batter into the loaf pan, smoothing the top to ensure it is evenly distributed. Bake for 60-65 minutes, until the top turns golden and a toothpick inserted into the center comes out clean.
