Ingredients
- 2 large eggs

- 3 Tbsp (45 ml) lemon juice, (1 large lemon)
- 1 cup (240 ml) granulated sugar
- 1 tsp (5 ml) baking powder
- 1/2 tsp (3 ml) baking soda
- 1/2 tsp (3 ml) salt
- 2 cup (480 ml) s all-purpose flour
- 2 cup (480 ml) s lightly packed shredded zucchini
- 3 Tbsp (45 ml) poppy seeds
- 1 1/2 cup (360 ml) s powdered sugar
- 2 Tbsp (30 ml) lemon juice, or a mixture of lemon juice and milk (or cream) to thin
Instructions
- Preheat your oven to 350°F and prepare a 9×5 loaf pan by greasing it. For easier removal after baking, you may also line it with parchment paper.
- In a large bowl, combine the eggs, vegetable oil, lemon zest, lemon juice, and granulated sugar, whisking until the mixture is smooth and well-blended.
- Add the baking powder, baking soda, and salt to the mixture, and whisk until integrated.
- Gradually incorporate the all-purpose flour, mixing until everything is combined and no dry flour remains visible.
- Carefully mix in the shredded zucchini and poppy seeds.
