Ingredients

  • 2 lbs (900g) tender young summer squash, chopped into bite-sized pieces
  • 1 large red onion, thinly sliced into half moons
  • 1 bunch fresh basil leaves
  • 1/3 cup (80ml) chopped fresh parsley leaves
  • 1/4 cup (60ml) chopped fresh cilantro leaves
  • 2 Tbsps (30ml) extra virgin olive oil or avocado oil
  • 1 large fresh lemon, juice and zest
  • sea salt and ground black pepper, to taste
  • 1/2 cup (50g) freshly shaved cheese


Instructions

  1. Chop the summer squash into small, bite-sized pieces and transfer them to a large mixing bowl.
  2. Incorporate the thinly sliced onion and all the fresh herbs into the bowl.
  3. Pour the oil over the mixture, followed by the juice and zest of a fresh lemon.
  4. Lightly season with sea salt and ground black pepper to your liking, then mix everything thoroughly.
  5. Chill the salad in the refrigerator for an hour to let the squash absorb the flavors.
  6. Before serving, give the salad another stir and sprinkle with freshly shaved cheese.
