Ingredients
- 1 cup old-fashioned oats
- 1/2 cup peanut butter or almond butter
- 1/4 cup honey or maple syrup

- 1 teaspoon vanilla extract
- 1/2 cup shredded coconut (optional)
- Zest of 1 lemon (optional)
Instructions
- Combine the oats, peanut butter, honey, lemon juice, and vanilla extract in a mixing bowl.
- Mix well until fully combined; then, stir in the optional shredded coconut and lemon zest.
- Scoop out tablespoon-sized portions and shape them into cookies.
- Place the cookies on a lined baking sheet and chill in the refrigerator for at least 30 minutes until firm.
