Description

Ingredients

  • 1 cup old-fashioned oats
  • 1/2 cup peanut butter or almond butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut (optional)
  • Zest of 1 lemon (optional)


Instructions

  1. Combine the oats, peanut butter, honey, lemon juice, and vanilla extract in a mixing bowl.
  2. Mix well until fully combined; then, stir in the optional shredded coconut and lemon zest.
  3. Scoop out tablespoon-sized portions and shape them into cookies.
