Description
Savory lemon herb roasted potatoes that are crispy on the outside and tender on the inside, perfect for any gathering.
Ingredients
- 1 lb (500g) baby potatoes
- 1/4 cup olive oil
- 2 tablespoons melted butter
- 3 cloves garlic, minced
- 1 tablespoon Italian parsley leaves, chopped
- 1 tablespoon lemon juice
- 1 tablespoon honey
- 1/4 teaspoon salt
- 3 dashes ground black pepper
Instructions
- Preheat the oven to 350°F (176°C).
- Cut slits in the baby potatoes without cutting all the way through.
- In a separate bowl, mix all the ingredients for the oil mixture together.
- Place the potatoes in a roasting pan and brush them with the oil mixture, ensuring to coat the inside of the slits. Reserve some of the mixture for basting later.
- Roast the potatoes for 1 hour, basting with the remaining oil mixture at 30-minute intervals.
- Serve immediately after roasting.
Notes
For extra flavor, consider adding Parmesan cheese during the last 10 minutes of roasting. Soaking the potatoes in water for 30 minutes before roasting can enhance crispiness.
