Description

A healthy twist on classic banana bread featuring Kodiak buttermilk pancake mix, Greek yogurt, and optional chocolate chips for indulgence.


Ingredients

  • 2 cups Kodiak buttermilk pancake mix
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 3 medium overripe bananas (brown/spotty)
  • 1/2 cup plain Greek yogurt
  • 1 tbsp vanilla extract
  • 2 large eggs
  • 1/2 cup brown sugar
  • 1/4 cup milk
  • 1/4 cup avocado oil (or canola)
  • 1/2 cup mini chocolate chips (optional)


Instructions

  1. Preheat the oven to 325°F and prepare your loaf pan.
  2. Whisk together the Kodiak pancake mix, cinnamon, and baking powder in a large bowl.
  3. Mash the overripe bananas in another bowl, then mix in the Greek yogurt, vanilla extract, eggs, brown sugar, milk, and oil.
  4. Combine the dry ingredients with the wet ingredients, stirring gently to incorporate.
  5. Fold in mini chocolate chips if desired.
  6. Pour the batter into the prepared loaf pan and sprinkle with additional chocolate chips.
  7. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Notes

Use very ripe bananas for maximum sweetness. Adjust the baking time based on your oven calibration.
