Ingredients
- 2 cups Kodiak buttermilk pancake mix
- 1 tsp cinnamon
- 1 tsp baking powder
- 3 medium overripe bananas (brown/spotty)
- 1/2 cup plain Greek yogurt
- 1 tbsp vanilla extract
- 2 large eggs
- 1/2 cup brown sugar
- 1/4 cup milk
- 1/4 cup avocado oil (or canola)
- 1/2 cup mini chocolate chips (optional)
Instructions
- Preheat the oven to 325°F and prepare your loaf pan.
- Whisk together the Kodiak pancake mix, cinnamon, and baking powder in a large bowl.
- Mash the overripe bananas in another bowl, then mix in the Greek yogurt, vanilla extract, eggs, brown sugar, milk, and oil.
- Combine the dry ingredients with the wet ingredients, stirring gently to incorporate.
- Fold in mini chocolate chips if desired.
- Pour the batter into the prepared loaf pan and sprinkle with additional chocolate chips.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Notes
Use very ripe bananas for maximum sweetness. Adjust the baking time based on your oven calibration.
