Ingredients

  • 1 package (226g) chocolate vanilla cookies
  • 8 oz (226g) plain cream cheese
  • 1/2 cup (90g) chocolate chips
  • 1/2 cup (90g) white chocolate chips
  • 2 tsp (10ml) coconut oil
  • 1 scoop protein powder (optional)
  • 1/4 cup (60ml) powdered sugar alternative (optional)


Instructions

  1. Prepare a large baking sheet by covering it with wax or parchment paper.
  2. Place the entire batch of cookies, including their filling, into a food processor and blend until you have fine crumbs.
  3. Add the cream cheese to the crumbs and blend in short bursts until thoroughly combined. If desired, add protein powder or a powdered sugar substitute for extra sweetness, and mix well.
  4. Take about a tablespoon of the mixture at a time, shape it into 1-inch balls, and place them on the lined baking sheet. Freeze the balls for 15 minutes.
  5. Meanwhile, take two small microwave-safe bowls. In one, combine the chocolate chips with 1 teaspoon of coconut oil. In the other, do the same with the white chocolate chips and another teaspoon of coconut oil. Microwave each bowl individually for 60 seconds, then stir until smooth.
  6. Take the chilled balls out of the freezer, dip them into the melted chocolate mixtures, using a spoon to drizzle chocolate over the top, and let any excess drip off. Use half of the balls for the chocolate dip and the other half for the white chocolate.
  7. Place the coated balls back on the baking sheet and freeze them for an hour to allow the chocolate to set firmly.
  8. Store any remaining treats in a sealed container in the fridge.
