Ingredients

  • 2 tablespoons olive oil (30 ml)
  • 1 pound boneless, skinless chicken thighs, diced (450 g)
  • 8 ounces cremini or button mushrooms, sliced (225 g)
  • 4 cloves garlic, minced
  • 1 cup heavy cream (240 ml)
  • 1 cup chicken broth (240 ml)
  • 1/2 cup grated beef Parmesan cheese (50 g)
  • 1 teaspoon (5 ml) dried thyme
  • 1 teaspoon (5 ml) dried oregano
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup chopped fresh parsley (15 g)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  3. Add the diced chicken thighs to the skillet.
  4. Season the chicken with salt and black pepper.
  5. Cook the chicken until browned, about 5-7 minutes.
  6. Remove the chicken from the skillet and set aside.
  7. Add the remaining tablespoon of olive oil to the same skillet.
  8. Add the sliced mushrooms and cook until softened, about 4-5 minutes.
  9. Stir in the minced garlic and cook for 1 minute until fragrant.
  10. Pour in the heavy cream and chicken broth.
  11. Stir in the grated Parmesan cheese until melted.
  12. Add the dried thyme and dried oregano to the sauce.
  13. Season the sauce with salt and black pepper to taste.
  14. Let the sauce simmer for 3-4 minutes to thicken slightly.
  15. Return the cooked chicken to the skillet.
  16. Stir to coat the chicken with the sauce.
  17. Transfer the chicken and sauce mixture to a baking dish.
  18. Bake in the preheated oven for 20-25 minutes.
  19. Remove the casserole from the oven.
  20. Sprinkle chopped fresh parsley over the top before serving.
