Ingredients
- 2 tablespoons olive oil (30 ml)
- 1 pound boneless, skinless chicken thighs, diced (450 g)
- 8 ounces cremini or button mushrooms, sliced (225 g)
- 4 cloves garlic, minced
- 1 cup heavy cream (240 ml)
- 1 cup chicken broth (240 ml)
- 1/2 cup grated beef Parmesan cheese (50 g)
- 1 teaspoon (5 ml) dried thyme
- 1 teaspoon (5 ml) dried oregano
- Salt, to taste
- Black pepper, to taste
- 1/4 cup chopped fresh parsley (15 g)
Instructions
- Preheat the oven to 375°F (190°C).
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the diced chicken thighs to the skillet.
- Season the chicken with salt and black pepper.
- Cook the chicken until browned, about 5-7 minutes.
- Remove the chicken from the skillet and set aside.
- Add the remaining tablespoon of olive oil to the same skillet.
- Add the sliced mushrooms and cook until softened, about 4-5 minutes.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Pour in the heavy cream and chicken broth.
- Stir in the grated Parmesan cheese until melted.
- Add the dried thyme and dried oregano to the sauce.
- Season the sauce with salt and black pepper to taste.
- Let the sauce simmer for 3-4 minutes to thicken slightly.
- Return the cooked chicken to the skillet.
- Stir to coat the chicken with the sauce.
- Transfer the chicken and sauce mixture to a baking dish.
- Bake in the preheated oven for 20-25 minutes.
- Remove the casserole from the oven.
- Sprinkle chopped fresh parsley over the top before serving.
