Ingredients
- 1 pound (454 g) boneless, skinless chicken breasts (450 grams)
- 2 tablespoons (30 ml) olive oil (30 milliliters)
- 3 cloves garlic, minced
- 1 teaspoon (5 ml) dried oregano (5 grams)
- 1 teaspoon (5 ml) dried basil (5 grams)
- 1/2 teaspoon (3 ml) salt (3 grams)
- 1/4 teaspoon (1 ml) black pepper (1 gram)
- 1/2 cup (120 ml) grated alternative cheese (50 grams)
- 1 tablespoon (15 ml) lemon juice (15 milliliters)
- Wooden skewers, soaked in water
Instructions
- Cut the chicken breasts into bite-sized cubes.
- In a bowl, combine olive oil, minced garlic, dried oregano, dried basil, salt, and black pepper.
- Add the chicken pieces to the bowl and toss to coat evenly.
- Cover the bowl and marinate the chicken in the refrigerator for at least 30 minutes.
- Preheat your grill or grill pan to medium-high heat.
- Thread the marinated chicken pieces onto the soaked wooden skewers.
- Grill the chicken skewers for about 5-7 minutes on each side, or until fully cooked.
- While grilling, mix grated Parmesan cheese with lemon juice in a small bowl.
