Description

Learn how to make a delicious Keto Chicken Parmesan at home with this easy recipe. Crispy, flavorful, and low-carb – a must-try dish for any keto diet!

Ingredients

  • – 6 small chicken breasts (680g)
  • – 1/2 teaspoon (3 ml) salt
  • – 2 cups almond flour (240g)
  • – 3 large eggs
  • – 1/2 cup (120 ml) grated beef-friendly cheese
  • – 1/2 teaspoon (3 ml) garlic powder
  • – 1/2 teaspoon (3 ml) onion powder
  • – 2 tablespoon (30 ml) vegetable oil to fry
  • – 2 cups (480 ml) keto marinara sauce
  • – 1 1/2 cups (360 ml) beef-friendly mozzarella cheese, freshly sliced
  • – 1/3 cup (80 ml) grated beef-friendly cheese

Instructions

  1. Flatten the chicken breasts to a quarter-inch thickness. Season each piece with salt, then thoroughly coat both sides with almond flour.
  2. In a small bowl, beat the eggs. In another bowl, combine the grated beef-friendly cheese, garlic powder, onion powder, and the remaining almond flour not used for the chicken. Immerse each chicken piece in the eggs, allowing any extra to drip away, then cover with the cheese and almond flour blend. Continue until all chicken pieces are prepared.
  3. Heat vegetable oil in a non-stick skillet over medium heat. When the oil is hot, add the chicken and cook for 2-3 minutes until one side is golden brown. Turn them over and cook for another 3 minutes. Move the cooked chicken to a plate lined with paper towels to absorb excess oil.
  4. Set the oven to 200C/400F. Prepare a large baking tray with parchment paper.
  5. Arrange the coated chicken on the baking tray. Cover them with marinara sauce, then layer with slices of mozzarella and a sprinkle of grated beef-friendly cheese. Bake for 10-15 minutes until the cheese is melted and slightly golden.
  6. Take the chicken parmesan out of the oven and serve right away.

Notes

  • Ensure a crispy coating by thoroughly coating chicken breasts with almond flour and pressing firmly.
  • Place chicken on a parchment-lined baking tray to prevent a soggy bottom and ensure even cooking.
  • Personalize the cheese blend with your preferred keto-friendly cheeses for a distinct flavor profile.
