Ingredients
- 1 lb (454 g) ground beef
- 3 large zucchinis (or 4 small)
- 2 cups (480 ml) tomato sauce
- 3 cups (360 g) freshly shredded cheddar cheese
- 1 cup (100 g) shredded cheddar cheese
- salt, pepper, and garlic powder to taste
Instructions
- Heat a large skillet over medium heat and cook the ground beef, breaking it apart, until it is fully browned. Season with salt, pepper, and garlic powder to your liking.
- Combine approximately 2 cups of tomato sauce with the beef and lower the heat to allow it to simmer and soak up the sauce, ensuring it doesn’t become too watery. Adjust the amount of sauce if necessary.
- Set your oven to preheat at 400 degrees and lightly coat a 9×13 baking dish with grease.
- As the beef and sauce are simmering, remove the stems and slice your zucchinis in half lengthwise. Use a spoon or melon baller to scoop out the insides.
- Incorporate 2 cups of shredded cheddar cheese and 1/2 cup of additional cheddar into the beef and sauce mixture, stirring until the cheese is fully melted.
- Fill the hollowed zucchinis with the beef mixture and sprinkle the remaining cheddar cheese on top.
